Day 311 - Caramel Cookies

I made caramel sandwich cookies tonight. They were supposed to have brown butter frosting inside, but I thought that caramel frosting would taste even better

They are really good, but really rich. You can't eat more than one at a sitting.  I think the cookies need to be little bit crisper next time, but I definitely making these again!
