Day 81- Soda bread

Having basically missed St. Patrick's Day in the hoopla that was Spirit Week, I decided to try and make up for it today.  I love St. Patrick's Day, and I didn't realize how much until I was too busy to really enjoy it.

I like getting dressed up for St. Patrick's day.  I have false eyelashes, necklaces, and socks for St. Patrick's Day. I even bought a new shirt for St. Patrick's day this year, and then forgot to wear it.  I like that the girls made traps for leprechauns, binoculars to look for leprechauns, and disguises to trick leprechauns. I like that you get to celebrate with drinks and friends, and there are no gifts to be purchased. I like that you can hang out with your entire family in a bar all day without judgement.

But, I really love the food for St. Patrick's Day. I love corned beef, cabbage, potatoes and carrots and will gladly eat any that is offered or prepare my own (when my schedule allows).  I like potato soups, green frosted cakes and cookies, desserts flavored with Irish Cream, and chocolate cupcakes made with Guinness. And I love soda bread, so much in fact that I went back to the grocery store yesterday just to buy more sour cream and craisins so I could make soda bread today.

My soda bread is sweet and almost cake-like. It cooks forever in low heat and every year I forget to note on the recipe that it will take more than hour to cook, and that I will need to cover the top with foil so that it does not become too brown.

I like like warmed, or not, toasted, or not, but it has to be served with butter.  I could eat the entire loaf with butter by myself.
