I visited to 2 friends today for the Thanksgiving holiday, and thought it would be nice to bring something sweet along. I had seen this recipe for pumpkin cake with brandy buttercream frosting, and thought they would make great cupcakes to take along with me. I figured I would cheat a little on the cupcake part by using a mix, and then make the frosting from scratch.... The first batch didn't work at all. The cupcakes didn't rise, and the batter seeped through the cupcake liners and burned. Disaster. So, I started again, and this time I found a recipe for pumpkin cupcakes that used a cake mix.... and the SAME THING HAPPENED. The batter seeped through the liners and burned, and they didn't rise! So, I made snickerdoodles instead. Not holiday appropriate, but they were tasty and they turned out.
