We wanted to make Moose Tracks, but we couldn't figure out what to use for the caramel filled chocolate pieces, so instead we made Butterfinger ice cream. We started with a butter ice cream base, which to me tastes more like caramel, and then added Butterfingers and caramel.
It's not really ice cream of course, because I can't eat ice cream. It's almond milk and almond cream ice cream. I use tapioca starch to make it smooth and creamy like ice cream. It's delicious.
